Chocolate Peanut Butter Pie -Costco Copycat Recipe

Instructions

For the Graham Cracker Crust

Step 1
Combine graham crumbs, sugar, and melted butter. Press crust evenly into pie plate, building up an edge around the sides. Bake in preheated 350 degree oven for about 10 minutes. Cool completely.

For the Peanut Butter Layer

Step 2
1. In a mixing bowl, beat together whipped cream cheese and vanilla. Mix in peanut butter.

2. Add powdered sugar and mix together well. Add heavy cream. Beat until mixture thickens slightly, about 1 to 2 minutes. Add instant pudding mix and mix well until full incorporated.
Step 4
3. Spread half of peanut butter mixture into crust. Chill remaining half for piping around the edge of the pie before serving.

For the Chocolate Mousse

Step 5
1. Add 1 cup of chocolate chips to a mixing bowl. Bring 1 cup of the heavy cream to a simmer and pour over chips. Add 1 teaspoon of vanilla extract. Allow the the heated heavy cream to sit on the chocolate chips for about two minutes. Mix well until all chips are melted and then add remaining cup of heavy cream. Whisk together well. Cover with Saran Wrap and let the mousse chill for at least two hours. 

Step 6
2. Once chilled, beat until mixture begins to thicken. Add remaining three tablespoons of of instant white chocolate pudding mix. Beat for 2 minutes until mixture is thick and fluffy. Spread chocolate mousse evenly on top of peanut butter layer. 

Step 7
3. Pipe a border around the edge of the pie using a dessert decorating tool.
Step 8
Best if chilled overnight. Top with whipped cream before serving.
