Banana Cake w/ Cream Cheese Frosting

If you love banana bread you will love this banana cake. It is full of so delicious spices like cinnamon and nutmeg. This is a 2 layer cake with a layer of cinnamon cream cheese frosting and a layer of caramelized banana. This cake is frosted with the same cinnamon cream cheese frosting, drizzled with vegan caramel and topped with roasted bananas dipped in cinnamon sugar, so this cake is FULL of FLAVOR! Also…. Instructions

For the cake

Step 1
In a large bowl add your mashed bananas, eggs and milk and whisk to combine. Add vanilla extract and mix again. Add sugar and butter and whisk again. Fold in dry ingredients and mix to combine. Bake at 350 degrees for 55-60 minutes or until toothpick comes out clean.

For the Frosting

Step 2
Beat softened cream cheese until smooth, add sugar and cream together. Add in butter, vanilla and a slash of milk and whisk until desired texture (about 10-15 minutes)

For the Roasted bananas

Step 3
Slice your banana. Make your cinnamon sugar and dip the banana on both sides and place on parchment paper and bake at 375 degrees for about 10 minutes or until caramelized on top.

For the caramelized bananas

Step 4
In a bowl combine all your ingredients except your butter and mix. Melt your butter in a skillet and add in remainder of ingredients and allow to cook on medium heat until caramelized (about 15-20 min) stirring consistently.
