✨Squash & Pesto Egg Bites✨ for a taste of summer in the winter months!

You will need 5 eggs, 50g shredded squash and 2 tbsp pesto (try out my homemade spinach & walnut pesto for a nutty flavor)

Heat the oven to 350. Whisk eggs and squash and add to silicon baking cups. Top each one with a bit of pesto and stick in the oven for 10 minutes or until egg is no longer runny. Voila! An easy, delicious, and summery meal!
