Chop cilantro & dice jalapeños

Add sour cream, juice from 1 lime, 1/2 the cilantro, and jalapeño to a food processor.

Puree. Add additional lime and cilantro to taste.

Set in fridge for at least 30min.
Prep

Peel the shrimp.
Nachos

Preheat the oven to 325F (300 for convection).
Step 7
Heat a large cast iron skillet over medium high heat.
Step 8
Drain and combine corn, black beans, green chilies, and salsa.
Step 9
Brown chorizo, about 7-10 min.
Step 10
With a couple minutes remaining, add the shrimp to the skillet.

Drain over paper towels

Line baking sheet with parchment paper. Evenly distribute tortilla chips.

Spread veggie mix and meat evenly across the chips. Top with a layer of cheese.

Place in the oven until cheese is melted (~5min).

Remove from oven, drizzle liberally with the cilantro lime cream sauce, and put back in the oven for just a minute or two.

Remove from oven and serve immediately.
