Double Decker Nachos in Cast Iron
Great for a meal, but also as appetizers for twice as many people. If you don't have a cast iron skillet or would rather make this in a single layer version, this recipe can be adapted as single layer nachos on a sheet pan.

Instructions
Step 1
Preheat oven to 400 degrees.
Make Taco-Seasoned Beef
Step 2
Heat cast iron skillet over medium high heat. Crumble ground beef into pan and cook until lightly browned. Drain grease. Add taco seasoning and 2/3 cup water. Cook until water is mostly absorbed. Reserve in a bowl.
Step 3
Meanwhile, warm the refried beans in a bowl in the microwave to soften.
Assemble Nachos
Step 4
Wipe skillet with paper towel. Layer tortilla chips in an even layer on the bottom of the skillet. Sprinkle up to half of the cheese on top of the chips. Add dollops of refried beans on the cheese. Cover with a layer of taco-seasoned beef. Then repeat the layers: chips, cheese, beans, beef. Finally, top with additional cheese if desired. Or, change the order on the upper layer to chips, beans, beef, cheese (as shown in the photo).
Bake
Step 5
Bake on a middle rack in a 400 degree oven for about 10 minutes.
Serve
Step 6
Top with all of the fresh items that your crew will agree on. Serve the other toppings on the side in ramekins for each person to choose and add.
