Instructions
Step 1
1) slice spaghetti squash into rings
Step 2
2) scoop out seeds and inner pulp
Step 3
3) cook spaghetti squash on high pressure for 3 minutes; allow pressure to release naturally. remove spaghetti squash when finished and scoop out "noodles" from each ring.

4) heat instant pot on saute function; add olive oil
Step 5
5) add bell pepper and stir; add salt
Step 6
6) add spaghetti squash noodles into the instant pot
Step 7
7) stir until noodles are softened
Step 8
8) add chopped greens and stir until greens are softened
Step 9
9) serve with shaved parmesan to taste (or try toasted cashews or pecans)
