Instructions

Step 1
Preheat oven to 350°F. Combine and Mix warm mashed potatoes, half the cheese, chili powder, garlic, salt and pepper.
Step 2
Assemble burritos by evenly dividing potato mixture on tortillas. Fold bottom edge of tortilla and each side over potato filling; roll up. Spray a 13x9x2-inch baking dish with cooking spray.
Step 3
Arrange burritos into baking dish. Pour enchilada sauce over burritos. Sprinkle with remaining cheese. Bake uncovered, 10 minutes until cheese is melted.
