Ingredients

2 poundsbutternut squash
peeled, and 1/2" diced
2onions
large, peeled, and cut into small dice
1 poundshrimp
jumbo, cleaned and deveined, If using jumbo shrimp, cut shrimps into thirds, You can use smaller shrimp and cut maybe in half or not at all depending on their size
2 ouncesbutter
2 Tbspolive oil
1 cupBrandy
or White Wine, optional
1 quartvegetable broth
or seafood
1 pintheavy cream
1 teaspooncumin
1 teaspooncayenne
salt
to taste
pepper
to taste
Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
Peel and dice the butternut squash.
Step 3
Toss the butternut squash with olive oil, salt, pepper
Step 4
Spray a cookie sheet with cooking spray or brush olive oil on a sheet pan. Place the butternut squash in the pan and roast in the oven for about 15 minutes. We want an even brown color on the squash. The squash should be soft. Remove from the oven.
