Instructions

Step 1
Heat oven to 325. Place pork in a large Dutch oven with lid. Scatter garlic, ginger and red pepper flakes on top. In a measuring cup, mix soy, honey, and sesame oil. Pour over pork. Cover and cook for 2 hours
Uncover and flip pork, Cover and cook an additional hour.
Using tongs, transfer pork to a serving platter, remove fat from liquid, if desired. Bring sauce to a boil until reduced, about 8 minutes.
While the sauce simmers, coarsely shred the pork, top with lime juice. Drizzle some sauce and stir, Pass remaining sauce at the table.
