Instructions
Step 1
Add the eggs, mustard, cider vinegar and a pinch of salt into a jam jar or container that will fit the head of a hand blender

Measure the mix with your fingers, top up the mix until it is two fingers deep
Step 3
Gently add the oil so it sits on top of the eggs, the oil should measure the depth of four fingers
Step 4
Using a hand blender slowly blend from the bottom up until emulsified.

You’ll know it’s done with a spoon, can stand up straight in it
