Instructions

Step 1
Brown beef and drain.
Step 2
Return beef to pan. Add garlic, salt, pepper, oregano, and paprika. Stir to combine.
Step 3
Rinse rice and add to 12x8 baking dish. Add rotel, chopped peppers, onion, remaining spices, broth, and beef mixture. Carefully mix everything until well combine. Cover and bake at 400° for 45 minutes.
Step 4
Remove dish and foil, add shredded cheese on top, return to oven (uncovered) for 10 minutes or until cheese is completely melted.
