Instructions
Step 1
Fry the leeks with the butter for 5 minutes, then add the courgette, salt, paprika and mixed herbs and cook for 3 minutes (so it retains its bite). Add the spinach and allow it to wilt. Whisk the eggs and milk in a separate bowl, then pour over and distribute evenly. Top with the parmesan, then put on a high grill for 5 minutes until light brown.
Step 2
To serve, grate carrots and squeeze over lemon, and have as a side salad.
