Instructions
Step 1
For the cake: I used my mixer for combining these ingredients. Mash banana in mixer and add in 2 eggs. Add the melted butter and the sugar. Stop mixer and add the baking soda, vanilla and 1 cup of the flour, continue to mix on low and blend in the last cup of flour.
Step 2
In a separate bowl combine and blend the softened cream cheese with the egg and sugar until smooth
Step 3
Oil or spray the steaming pot. I used my rice cooker pot. Coat with a light layer of oil or non stick product.
Step 4
Pour 1/2 to 2/3 of the cake batter in the prepared pot
Step 5
Pour all of the cream cheese mixture on top of the cake batter. You can spread it across or swirl it lightly into the batter.
Step 6
Top the cream cheese mixture with the rest of the cake batter
Step 7
Place the lid or cover on the pot and cook for 50 minutes
Step 8
Check cakes doneness with a toothpick. Continue cooking checking doneness at 30 minute increments until toothpick comes our clean
Step 9
Cool cake on a wired rack until at room temperature.
Step 10
Wrap and cover cake until ready to serve. Store in refrigerator for prolonged storage
Step 11
This cake is moist and delicious just the way it is but if you want to add a special touch try adding whipped cream or a cheese cake frosting, and sprinkle with sliced almonds.
