Instructions

Step 1
Preheat your oven to 350 degrees
Step 2
Whisk together eggs and 1/2 cup of milk. Cook the scrambled eggs until they are finished cooking

Add the eggs to each tortilla
Step 4
Cook your bacon, or use precooked bacon or even bacon bits
Step 5
Add bacon to the tortilla then top with cheddar cheese to taste

Roll the tortillas then fry each side in the same skillet you used to cook your eggs. This will make sure they don’t get sauce while baking with the gravy

Once your tortillas are browned on each side, add them to a 9x12 greased baking dish

Begin making your sausage gravy in the same skillet. Start by browning your breakfast sausage

Once browned, add in your flour and cook for 5 minutes
Step 10
Next, add 2.5 cups of milk and whisk until simmering. You’ll then season with pepper and continue whisking until it reaches your desired thickness
Step 11
Top your tortillas with gravy and the remaining shredded cheese
Step 12
Cook at 350 for 20 minutes and broil for 2 minutes
