Instructions
Step 1
1. Preheat broiler to high

2. Heat oil in a medium ovenproof skilled over medium high heat until shimmering. Add onion, pepper, poblano and jalapeno. Cook, stirring occasionally until soft, 7-9 minutes
Step 3
3. Add garlic and cumin, cook stirring constantly until fragrant, about 1 minute
Step 4
4. Sprinkle four over the veges and cook, stirring constantly until they are thoroughly coated, about 1 minute
Step 5
5. Add broth and bring to a boil, stirring to combine. Cook, stirring until slightly thickened, about 1 minute
Step 6
6. Stir in cream cheese until melted
Step 7
7. Stir in chicken, tomatoes, tortilla pieces and salt.
Step 8
8. Sprinkle evenly with cheese
Step 9
9. Place the skilled under the broiler and broil until the cheese is melted and browned, about 1-2 minutes
