Butternut Squash Macaroni

An easy, cheesy cozy comfort dinner recipe that feels like youāre having a big nostalgic bowl of macaroni but with better macros. Deets below!
š§YOUāLL NEED:ā£
1 pound shredded and cooked chicken breastā£
4 cups butternut squash (can buy pre-cut)ā£
1/2 cup parmesan cheeseā£
3/4 cup shredded sharp cheddar cheeseā£
Optional goat cheese to topā£
1 tbsp minced garlicā£
2 tbsp whipped cream cheeseā£
2 tbsp plain Greek yogurtā£
Option seasonings (Italian, salt, pepper)ā£

š§HOW TO:ā£
1. SautĆ© butternut squash over medium heat in an oiled oven-safe pan for 10 minutes or until cooked throughā£
ā£
2. Add all other ingredients (chicken last) and combine thoroughly. Stir continuously until cheese is fully melted.ā£
ā£
3. Top with a little more cheese, then put in oven with Broiler on for 5 minutes or until bubbling.ā£
ā£
Serve hot and enjoy! Makes 2-3 servings.
