Instructions

Sauce

Step 1
Brown sausage. In large skillet combine with spaghetti sauce, water, mushrooms & spices. Simmer 5-10 minutes.

Filling

In medium bowl combine ricotta cheese, green onion and egg. Mix well. (the egg makes it spread easier & stick together)

Assembly

Step 3
Cover bottom of 13x9 pan (or 2 smaller 8x8 pans) with sauce. Layer noodles, cheeses & sauce until full. Spread ricotta over dry noodles, top with mozzarella then sauce for each layer. Cover noodles thoroughly with sauce, out to the edges. If your pan is deep enough, you should get 3 layers. op layer, just sauce & mozzarella, no ricotta mixture.
Step 4
Cover and refrigerate 24 hours or at least overnight. The longer this sits in the fridge, the better it is. It can be made up to 1 week ahead of time.
Step 5
Let stand at room temperature prior to baking. Bake covered for 45 minutes at 350. Uncover. Top with more cheese (if it all sticks to the foil) and bake 5-10 more minutes if needed. Let stand 15 minutes after baking.
Step 6
Sprinkle with fresh parmesan or romano & serve.
