Step 1
• Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). • In a large bowl, combine the sliced peaches, white sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir until the sugar is dissolved and all ingredients are well mixed. Pour the peach mixture into a 9x13 inch baking dish and bake in the preheated oven for 10 minutes. • While the peaches are baking, combine the flour, white sugar, brown sugar, baking powder, and salt in a large bowl. Cut the butter into the flour mixture until it looks like coarse crumbs. Pour in the boiling water and stir until the mixture is evenly moistened. • Remove the peaches from the oven and drop spoonfuls of the topping over them. The topping will spread as it bakes. • Mix the white sugar and cinnamon together and sprinkle it over the topping before it goes into the oven. • Bake the cobbler for about 30 minutes, or until the topping is golden brown. • Allow the cobbler to cool for a few minutes before serving. Serve warm, with whipped cream or ice cream if desired.
