Lemon Chicken

Instructions

Step 1
Fillet chicken breast and place in an glass baking pan sprayed lightly with cooking spray.
Step 2
Preheat oven to 350ºF. Melt butter in a small saucepan with minced onion and garlic and pour into a mixing bowl. Stir in lemon juice as well as squeeze in half the lemon, Montreal seasoning and pepper until well blended. Pour over chicken as well as allowing some of the mixture to go underneath the chicken. Place rest of lemon slices on top chicken.
Step 3
Cover the pan with aluminum foil. Bake for 1 hour and while chicken is cooking, frequently spoon sauce over chicken. Serve with Buttered mash potatoes, corn and carrots. Spoon lemon sauce on top.

For the Carrots

Step 4
Slice and boil for 2 minutes then sauté with light butter and pepper, garlic and onion powder.
