This simple recipe makes incredibly fruity jam that is sugar-substitute (thickened with chia, instead of tons of extra sugar), totally delicious, healthy and made with fresh kiwifruit. *It works with nearly any juicy fruit. It only takes 5-7 minutes to make and can set in 20 minutes. It is spread or jam packed with delicious high fibre chia seeds with all their plant omega-3 fatty acids. Also, Kiwifruit contains abundant amounts of vitamin C, which stimulates the body's immune response. In fact, the kiwifruit contains daily recommended intake of vitamin C. This bold fruit provides a burst of immune-boosting nutrients in every bite and rich in antioxidants, vitamin K, vitamin E, folate, and potassium.

Instructions

Step 1
Heat kiwifruit in a small saucepan over medium-high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble. Use a spoon or potato masher to mash the fruit to your desired consistency. (I like it to have a few chunks of fruit, instead of being completely smooth)
Step 2
Stir in the chia seeds and lemon juice until combined. Then stir in sugar or any sweetener if needed.
Step 3
Remove from heat and let cool for 10-20 minutes. It will thicken considerably as it cools.
Step 4
Give it a final good stir. Serve immediately, or transfer to a sealed jar or container.
