Instructions

Step 1
Process flour, salt, butter in food processor until crumbs are formed.
Step 2
Add 4-6 Tbsp water; adding a little at a time, until dough is formed.

Form dough into disc on plastic wrap

Wrap and refrigerate 30 min
Step 5
Roll dough 1/8" thick; put in tart pan; trim & pierce bottom

Freeze 30 min
Step 7
Beat eggs; add heavy cream, salt, pepper, nutmeg. Mix well.
Step 8
Crumble parchment paper; spread over top of crust; fill with pie weights or beans or rice.
Step 9
Bake 15 min@ 350; remove weights; bake 5-10 min more until slightly golden.
Step 10
Spread chosen quiche filling on crust.
Step 11
Ladle egg mixture over filling.
Step 12
Bake about 35 min until golden brown and set
Step 13
Cool slightly; place on small plate to remove outside of pan.
