Step 1
Cut the eggplant, zucchini, yellow and red pepper in slices and grill them until they are almost crispy. Remove them from the fire, add some salt and let them cool. The cooking time depends on how thick the vegetables slices are.

Cut the bread in half and spread some mayo on both sides.

Place some salad and tomato slices on the bottom side, add the grilled vegetable and sprinkle with some rosemary at your own taste. Add some mozzarella slices too.
