Step 1
Start by preparing the zucchini. Slice the zucchini into thin, even rounds. Heat a grill pan or a regular non-stick pan over medium-high heat and brush it lightly with olive oil. Once hot, place the zucchini slices on the pan and grill for 2-3 minutes on each side until they have softened and developed grill marks. Season with a small pinch of salt, then transfer the zucchini to a plate and let them cool.
Step 2
Place the pizza dough on a lightly oiled baking tray or parchment paper and gently stretch it into your desired shape—round or rectangular. If the dough feels elastic and pulls back, let it rest for 5-10 minutes and try again. Once shaped, allow the dough to rise for about 20-30 minutes at room temperature.
Step 3
Preheat the oven to 230°C (450°F).
Step 4
Once the dough has risen, evenly spoon the tomato sauce over the surface, spreading it with the back of the spoon. Use just enough to lightly coat the dough without making it soggy. Sprinkle a small pinch of salt and drizzle a teaspoon of olive oil over the sauce.
Step 5
Transfer the pizza to the preheated oven and bake for 12-15 minutes. Cooking time depends on the thickness of the dough—thinner pizza will cook faster, while a thicker base may take closer to 15 minutes.
Step 6
After this initial bake, remove the pizza from the oven and distribute the torn mozzarella evenly over the top. Add the grilled zucchini slices, spreading them across the surface of the pizza.
Step 7
Return the pizza to the oven for an additional 3-4 minutes, just long enough to melt the mozzarella and warm the zucchini.
Step 8
Remove the pizza from the oven, drizzle with a little extra olive oil if desired, and let it rest for 2-3 minutes before slicing and serving.
