Air Fryer Black Bean Burger

Quick, tasty and packed with protein and fibre, this meatless burger impresses all the family. Serve on a brioche bun, gluten free roll or wrapped up in a lettuce leaf. No air fryer? No problem! This recipe can also be made on the grill!

Instructions

Step 1
Chop and prepare the coriander, parsley, tomato, red onion. Wash the lettuce leaves.
Step 2
Drain and rinse the black beans.
Step 3
Combine the black beans, coriander, parsley, harissa paste and breadcrumbs in a large bowl. Using clean hands, mix and squeeze the ingredients together
Step 4
Form 4 burger patties and set aside. At this point you can leave in the fridge to cook later. Alternatively place food in an air-tight container, wrap it well in freezer bags or freezer wrap and don't forget to label it!
Step 5
Put the oil in to a small bowl and lightly brush over each side of the burger patty with your hands or a pastry brush.
Step 6
Place patties into a preheated air fryer for 10 minutes on high (200C), turning midway.
Step 7
Cut each bun in half.
Step 8
Cut each brioche bun in half. Place a slice / 20g of cheese on each bottom half. Place under a preheated grill for 2 minutes until the cheese has melted and remove.
Step 9
Spread a teaspoon of mustard on the top half of the burger buns.
Step 10
Once cooked, place the black bean burger on top of the melted cheese and add the sliced tomato, lettuce, onion, gherkin and the top half of the bun.
