Step 1
In a grilling pan, grill tomato, basil, and eggplant with olive oil. Keep turning with spatula. Takes about 5 mins.
Step 2
Grill spinach for half a minute with olive oil.
Step 3
Cut a Panini in half lengthwise. One both sides, spread hummus. One one side, spread onion jam. On the other side, add the grilled tomato, eggplant, basil, and spinach. Season with salt and pepper. Crumble feta cheese on top.
Step 4
In a sandwich/panini maker, grill the panini. Once out, cut in half with a long knife.
Step 5
Eat hot. Grilled veggies panini is ready!
