Instructions
Step 1
Add flours, xantham gum, and salt to a food processor; pulse until evenly combined.
Step 2
Add the butter cubes, egg, and vinegar. Pulse until the dough just begins to come together into a ball, being sure not to overwork it. The mixture should resemble coarse breadcrumbs.
Step 3
Turn out the dough onto plastic wrap and pat into a ball, then flatten and seal.
Step 4
Refrigerate for at least 30 minutes, or up to 3 days. You can also freeze the pie crust and thaw out as needed.

Note – pockets of butter are normal.
For Filling
Step 6
Preheat the oven to 350 degrees F. Using a shallow sided 9" inch glass pie plate place the softened pie crust inside and crimp the edges. We double folded the edges of the crust and then crimped.
Step 7
Add the bacon and cheeses to the bottom of the pie crust.
Step 8
In a medium bowl mix the milk, eggs, salt and pepper, then pour over the bacon and cheese.
Step 9
Bake for 45-50 minutes or until a knife, inserted in the center, comes out clean. Let set for 5-10 minutes before cutting.
