Instructions

Dried fruit preparation

Step 1
Prepare a cup of black tea and leave it aside to cool.
Step 2
Put dates in a small bowl and pour some boiling water over them. Leave aside to cool down.
Step 3
Mix the rest of the dried fruit together in a large bowl.
Step 4
Remove pits from dates and add them including water to dried fruit mixture.
Step 5
Add cold tea and brandy to mixture and stir making sure all of the fruit is soaked.
Step 6
Leave overnight covered with a plate.

Pudding bowl preparation

Step 7
Grease the pudding bowls with margarine
Step 8
Trace the bottom and top of the pudding bowl onto greaseproof paper and cut out the two circles. Place the smaller one in the bottom of the bowl and the put the larger one aside.
Step 9
Get a piece of aluminium foil large enough to cover the top of the bowl and make a pleat in it. Set aside.
Step 10
Cut a piece of string long enough to cover the diameter of the bowl. Set aside.

Making the mixture

Step 11
Sift the flour, baking powder, spices and salt into a large mixing bowl.
Step 12
Add the rest of the dry ingredients and mix together.
Step 13
In a jug add all the wet ingredients and mix together.
Step 14
Add the dried fruit preparation and the wet ingredients into the dried ingredients and stir until you get a smooth and wet mixture.
Step 15
Cover the mixture with a tea towel and let it stand for at least three hours.

Steaming the pudding

Step 16
Divide the pudding mixture into the pudding bowls making sure to compact and smooth the top. Then place the larger circle of greaseproof paper on top smoothing down.
Step 17
Fit the sheet of aluminium foil over the top of the pudding and tie the string around. Cut off any excess foil.
Step 18
Add 2 litres of water to the basin of the Ninja foodi. Then add the basket and place the pudding bowl inside. Attach the lid setting the valve to vent, and set the foodi to steam for 30 minutes.
Step 19
When the steamer has finished, change the valve on the lid to seal. Then set the foodi to pressure selecting high and 70 mins.
Step 20
When the pressure cooker has finished, leave the pudding inside to cool down.
Step 21
Remove the pudding bowl from the foodi. Remove the foil and attach the pudding lid. Then wrap the pudding bowl in cling film and put away in a , cool, dark place until ready to serve.
