Instructions

Step 1
Cut cucumbers length wise and then into quarters. Smash flat with knife and remove loose seeds.
Step 2
Add cucumber, 1tsp of salt and 1tsp of sugar into a bowl and mix. Cover bowl and place a weight on top of cucumber and put in fridge
Step 3
In another bowl, mix in Lao Gan Ma, ginger, sesame oil, rice vinegar, soy sauce, 1/2 tsp sugar and olive oil
Step 4
Get cucumbers and mix in with dressing. Adjust spicy ness with Lao Gan Ma if needed
