Zuppa Toscana

"Soup of Toscana" an Italian-American dish that actually has no roots in Tuscany. Decadent and delicious Olive Garden zuppa but better, made with fresh ingredients. Even if you use frozen meat and boxed stock, this will turn out great. Every time I've made this for friends they love it. "This is the best soup I've ever had" was pretty common feedback. Ingredients

1 lbground spicy italian sausage
mild can be substituted
8slices bacon
diced, divided
1yellow onion
medium, peeled and diced
4cloves garlic
minced
2 Tbspflour
cornstarch can be substituted
32 ozchicken stock
3russet potatoes
large, peeled and diced into 1/2 inch pieces
1 cupheavy cream
0.5 bunchfresh baby spinach
more or less a few large handfuls destemmed and chopped into bite sized pieces
salt
to taste
pepper
to taste
red pepper flakes
cayenne

paprika

Instructions
Step 1
In a large heavy bottom pot cook sausage then remove and drain most grease. Cook diced bacon until crisp in residual grease and remove. Sautee diced onions and minced garlic in residual bacon grease (half the garlic if you dont love it as much as I do, but use at least 2 cloves), add any spices you like along with the flour combined with a bit of water and cook down before adding stock or broth (home made will make a huge difference here) and diced potatoes, simmering until potatoes are fork tender but not mushy Stir in the meats, cream, and chopped kale. Ready to serve once kale is wilted and youve seasoned to taste.

Side note I usually dont add any flour or starch powder in mine but rather add another small potato and mash it in the soup to thicken it up a bit.
Step 3
Get creative with your spices, especially if you cant find fresh spicy Italian sausage! Have fun with it!
