Instructions

Step 1
Slice onion into small bite size, and dice some garlic, set aside; Slice bacon into small bite size; Wash and tear fresh kale into small bite size as well;
Step 2
In a Dutch oven over medium heat, add Italian sausage, use a spoon to break up the pieces. Sprinkle crushed red pepper flakes over when browned and cooked through, drain and set aside.
Step 3
Cook sliced bacon pieces in the same Dutch oven over medium heat until crisp. Transfer crisp bacon to a bowl and set aside. Stir in minced garlic and then sliced onions; cook until onions are soft and translucent.
Step 4
Pour chicken broth into the Dutch oven with the onions and garlic, and bring to a boil over high heat. Once boiling, add sliced potatoes, and boil until fork tender. Reduce the heat to medium and stir in the coconut milk and the cooked sausage; heat through.
Step 5
Finally add the crispy bacon and fresh kale pieces into the soup just before serving and cook util the kale is bright green and softened. Add salt and pepper to taste as needed.
