Lemon delicious cashew balls
Inspired by a recipe from the healthy chef, however I've added in protein powder and reduced the coconut. You can use any nuts you like, I use a mix of almonds, brazils and cashews.

Instructions
Step 1
Combine the cashews, protein powder, salt and coconut in a food processor and blend until the ingredients are finely chopped.
Step 2
Add the dates and lemon zest - blitz again to combine.
Step 3
Pour in the lemon juice and vanilla and mix one last time to combine
Step 4
Roll into teaspoon spoon sized balls and coat in coconut.
Step 5
Store in the fridge for up to two weeks.
