Buffalo Blue Cheese Chicken Bombs

Instructions

Step 1
Using a large mixing bowl combine chicken, 1 egg, breadcrumbs, salt, pepper, ranch seasoning, garlic powder, onion powder, dried basil, and dried oregano until everything is well incorporated
Step 2
Take tablespoon size portions of the meat mixture, spread it out evenly onto your hand then take teaspoon size portions of the blue cheese crumbles and place it snuggly on top of the chicken. Then take another teaspoon of the meat mixture and top it on the blue cheese crumbles then use your hands to roll the chicken into a ball sealing the edges with the blue cheese crumbles in the middle

Repeat until all the meat mixture is used. It should make around nine chicken bombs
Step 4
This step is not completely necessary but I like to stick them in the freezer for 30 minutes to an hour before the dredging process
Step 5
Combine the flour and the Goya seasoning into a large mixing bowl
Step 6
In a separate bowl combine the eggs and whisk well
Step 7
Now take it the individual chicken bombs, start with the flour then go to the eggs, back to the flour, back to the eggs then one more time in the flour and deep fry immediately at 375°F for 6-7 minutes (three times in the flour, twice in the eggs)
Step 8
Remove from oil and let dry on a rack or paper towels
Step 9
After a few minutes transfer to a mixing bowl with the buffalo sauce and coat well
Step 10
Garnish with chopped chives
Step 11
Serve while hot
