Instructions

Step 1
Lemongrass - bash the lemongrass to make it open slightly. Slice diagonally into 5mm thick pieces
Step 2
Mix the marinade ingredients in a large bag. Add the chicken then seal the bag pressing out the air. Massage to disperse the marinade over the chicken. Place the bag in a bowl and refrigerate for 24 hours
Step 3
Preheat the oven to 180 degrees fanforced. Line a baking tray with foil then baking paper
Step 4
Remove chicken from the marinade, brush off lemongrass piece then spread out on the prepared tray. Discard the excess marinade
Step 5
Bake for 30 minutes. Remove from oven and baste the chicken by brushing the tray juices onto the skin. Bake for 10 minutes, baste again and bake for further 15 minutes. Remove from oven
Step 6
Transfer chicken to serving platter and leave to rest for 5 minutes. Baste the skin to make it shiny and golden.
