Step 1
Have all ingredients at room temperature. Line muffin pans with paper baking cups or grease the muffin cups well. Pre-heat oven to 375F. Sift flour measure and resift 3 times with baking powder and salt.
Step 2
Cream butter and honey until well blended then add ¼ c. of sugar and egg yolks and beat until well smooth and fluffy. Stir in vanilla. Add flour and milk alternately in 4 or 5 portions, beginning and ending with flour and beating until smooth after each. Beat egg whites until stiff enough to form soft shiny peaks then gradually beat in remaining sugar. Fold whites lightly but thoroughly into batter.
