Step 1
Prepare the burger first. Take the piece of meat you have, remove skin and bones and mince it. Take as much time as it is necessary to make it look like ground meat.

Take a bowl and add a bit of salt, pepper, thyme, the flour and the zest of half orange. Mix all the ingredients with a spatula and then form the burger. Keep is aside in the fridge while we prepare the other ingredients.

Squeeze the orange and keep the juice aside.

Put a pan on the stove with a spoon of olive oil and keep the heat on a medium level. Cover the pan and when onions are starting becoming translucent add some brown sugar. Stir and cover again. Stew the onion for about 10 minutes and then switch of the heat without removing the lid, so they can stay warm while we prepare the other ingredients.

Take another pan and put a spoon of olive oil with a clove of garlic into it. After a couple of minutes add the mushrooms and stir. After two more minuts pour the white wine in the pane and wait until the alcohol is evaporated before adding the parsley and a bit of salt and pepper. When the mushrooms are quite soft, switch of the stove and keep them warm while you cook the burger.

Warm up pan with a generous piece of butter into it. When is melted and the temperature quite high, ease down the burger. Keep the heat high and after a few minutes pour half of the orange juice. Turn the burger on the other side and do the same. Slice the burger bun in half and put it into the pan for a couple of minutes so you can have it warm too.

Spread some mayo on the bottom side. Add some salad and sliced tomato and the the caramelized onions. Add then the burger, the sliced cheese, the mushrooms and as last thing the foie gras.
