Mum's duck

The world famous duck my mum makes.

Instructions

Step 1
Wash the duck, remove any feather.
Step 2
Salt both sides then sprinkle some black pepper on top.
Step 3
Grease a baking pan with (duck) fat, depending on how fatty the duck is
Step 4
Cut the onion into slices, add it to a baking pan, along with a few cloves of garlic.
Step 5
Add the duck pieces on top of the onion, skin down.
Step 6
Cover with a lid or foil.
Step 7
Bake at 160 C (320 F) with top and bottom heat, until soft - can take an hour or more.
Step 8
Check sometimes and pour some of the fat on top of it.
Step 9
Once soft, take off the cover, turn the duck around to be skin side up and let it brown. You can add the apples to the tray now.
