Step 1
-Turn on oven to 350* and prepare pan or pans by spraying them well with non stick spray and lining them with parchment paper. Either use one large loaf pan or two, 9 inch rounds
-Sift together the dry ingredients into a medium bowl and set aside. For this recipe (and most baking ) sugar is NOT considered a dry ingredient.
-Whisk the eggs and sugar together until light and fluffy then add the milk, EVOO, extracts, and lemon. Whisk well.
-Add the flour mixture to the egg mixture and whisk just to barely combine. Do not over mix!
-Pour the batter into prepared pan or pans then bake, rotating after about 25 minutes. Bake until golden brown and a toothpick inserted into middle comes out clean. A large loaf pan will take up to 1 hour, the two rounds will take 35-45 minutes.
