Ingredients
4 servings
2 tablespoonsextra-virgin olive oil
4 x 6 ouncecod fillets
kosher salt
ground pepper
3 tablespoonsall purpose flour
2 tablespoonssalted butter
1Meyer lemon
or regular, sliced, plus more for serving
1garlic clove
minced or grated
1 bunchasparagus
ends trimmed, cut into 1 inch pieces
1 cuporzo
uncooked
2 ¾ cupslow sodium chicken broth
1 tablespoonlemon juice
1 tablespoonfresh dill
chopped, for serving
Instructions
Step 1
In large skillet, heat olive oil over medium heat. Season cod with salt and pepper and then sprinkle it evenly on both sides with flour
Step 2
2. When oil simmers, add cod and sear until golden, 3-4 minutes per side. Transfer cod to plate.
Step 3
Using the same skillet, sear butter and lemon slices until the lemon is golden, about 1 minutes per side. Add the lemon to the cod on the plate.
Step 4
Again on same skillet, cook garlic, asparagus, and orzo until the garlic is fragrant and the orzo is toasted, 2-3 minutes.
Step 5
Add the chicken broth and lemon juice. Increase heat to high and bring to a boil. Cook stirring occasionally, until orzo is al dente, about 10 mins.
Step 6
Slide the cod, lemon slices and any collected juices back into the skillet and cook until everything is warmed through, about 1 minute.
Step 7
Top with fresh dill and serve.
