Instructions

Step 1
Heat a large saucepan and add a few sprays of fry light, the onion, mushrooms and the garlic. Cook for around 5 minutes until softened.

Step 2
Add the rice and stir constantly for 2 minutes

Step 3
Add the parsley, salt and pepper, and add the stock a little at a time until the rice is cooked and a spoon stands upright in the pan (should take around 20 minutes). Stir in the spinach.

(Optional) add butter and parmesan (I used vegan alternatives) and stir until melted. Serve!
