Instructions
Step 1
Preheat oven to 200C.
Step 2
Boil or steam the potatoes for 10-15 minutes.
Step 3
Place all ingredients (apart from mint and spring greens) in an ovenproof casserole dish and stir.
Step 4
Add 250ml of water, cover and place in oven. Add a lamb or vegetable stock cube to the water (optional).
Step 5
Reduce oven heat to 160C and cook for 60 minutes. Check halfway through, and remove lid for 30 minutes if lots of liquid is left.
Step 6
Remove from oven. Garnish with mint and serve with spring greens.
