1 x 20 ouncecrushed pineapple in heavy syrup
can, chilled, undrained
1 tablespoonslemon juice
optional but recommended
1 packageinstant vanilla pudding mix
6-serving size
1 x 8 ouncesour cream
container
1shortbread pie crust
9-inch, store bought
1 cupswhipped cream
prepared, or Cool Whip
1 x 8 ouncepineapple slices
can, drained really well on paper towels and each slice cut into thirds
6maraschino cherries
stemmed, drained well on paper towels
2 tablespoonssweetened flaked coconut
toasted if desired
Instructions
Step 1
In a large bowl, combine crushed pineapple with its syrup, lemon juice, and dry pudding mix until well blended. Stir in the sour cream. Spoon into pie crust. Dollop (or spread) prepared whipped cream or Cool Whip on top. Decorate top with pieces of pineapple, cherries, and coconut. Chill several hours before slicing and serving.
