Blueberry Muffins (or bread)
Blueberries can be fresh or frozen. It is low sugar recipe and I substitute part coconut for half the sugar.

mix dry ingredients

melt coconut oil and blend with eggs
Step 3
combine wet & dry
Step 4
fold in blueberries
Step 5
Pour into muffin tins or bread pan
Step 6
Top with chopped pecans and coconut
Step 7
bake 400 degrees for 18 minutes for muffins (or longer if baking in a bread pan)
