I grew up eating stuffed peppers & they quickly became one of my favorite comfort meals! This soup is packed with flavor, hearty & so cozy for fall evenings. A great meal prep option too! Hope you enjoy ♥️

Instructions
Step 1
Cook the rice according to directions then empty out onto a plate evenly, set aside & let cool fully.
Step 2
In a large pot, break up the ground turkey & cook until no longer pink.
Step 3
Add the garlic, onions, pepper, a drizzle of olive oil & sauté together for about 5 minutes. Add tomato sauce, crushed tomatoes, broth, ketchup, all spices - stir & bring to a boil.
Step 4
Add cream cheese, turn down the heat to maintain a low simmer for 10 minutes. Then add in the cooled rice, stir & taste to adjust any seasonings.
Step 5
Ladle into bowls, top with cheddar cheese & fresh parsley. Leftovers stay good in the fridge for 5 days.
