Instructions
Step 1
Soak the dried mushrooms in 1/2 cup warm water for 30'
Step 2
Put the quinoa in a saucepan with 2 cups salted water to boil, lower the heat, cover and leave for about 15' until it absorbs the water and becomes transparent.
Step 3
In a medium saucepan, heat the olive oil or butter and wilt the onion, stirring for 3'-4'.
Step 4
Add the mushrooms, fresh and dried, and saute for 5'-6' on medium heat.
Step 5
Pour in the wine and let it simmer for a few minutes and thicken like a sauce.
Step 6
Add salt, freshly ground pepper, garlic and boiled quinoa.
Step 7
Add 3 tablespoons of parmesan and mix well.
Step 8
Serve immediately, with parmesan cheese on top.
