¼ cuprolled oats
3 ounceswater
2eggs
large
½ cupnatural peanut butter
½ cuplight brown sugar
0.5buttermilk
1 tspvanilla extract
4 Tbutter
melted
1 ½ cupscake flour
whole wheat
1 tspbaking soda
⅛ tspsalt
2 tspground cinnamon
1apple
large, diced small
½ cuppeanut butter chips

Instructions
Step 1
Preheat oven to 350°
Step 2
Grease a 9 x 5” loaf pan and set aside.
Step 3
Place rolled oats, and water in a microwave safe bowl, in the microwave for two minutes.
Step 4
In the blender, add the cooked oatmeal, eggs, peanut butter, brown sugar, buttermilk, vanilla extract, and melted butter. Blend on speed two for 30 seconds.
Step 5
Add the cake, flour, baking soda, salt, and cinnamon to the liquid in the blender. Pulse blender 5 to 6 times. Remove the lid of the blender and scrape down the sides. Add the apples, and chips or nuts, if using, and stir into the batter, using a rubber spatula.
Step 6
Pour batter into the prepared pan and sprinkle with cinnamon sugar if desired. Bake for 40 to 50 minutes until a toothpick comes out clean. Allowed to cool for 10 minutes before removing the bread from the pan.

If you don’t have buttermilk you can add 1 ½ tsp of vinegar to ½ cup milk and allow it to thicken and curdle for about 5 mins before using.

White whole wheat flour or unbleached all-purpose flour can be substituted.
