Eastern Carolina BBQ Sauce

This is the BBQ, as served in Eastern NC and Northeastern SC. There are several regional BBQ styles in the Carolinas, so this is the one also known as Vinegar and Pepper Sauce.
In SC, there is this Vinegary style in Northeastern SC - basically, east of Camden to Myrtle Beach, and down to the Georgetown area. This style also crosses the northern border and encompasses Eastern NC.
In the Midlands and Charleston/Low Country region of SC- here they use a sauce that is a sweet and sour sauce heavy in mustard. It is also good sauce; just different.
Western and Piedmont SC- primarily they offer a sauce that has ketchup ( or tomato juice), mustard, and vinegar. It is also sweeter than this recipe here.
In NC, the variations are more subtle. In short, if you start in the East, the farther west you go, the more ketchup/tomato juice they add.
