Roasted Salmon with Sesame Broccoli
Part 6 of my healthy cooking series is this amazing skin-on salmon seared on cast iron and finished in the oven for a remarkable crust and ultra-crispy skin served with seasoned roasted broccoli.

Step 1
1. Preheat oven to 425 on convection.

2. Prep broccoli. Coat with sesame oil and season. Coat with 1 tbsp olive oil and sesame seeds. Place on baking rack and roast in oven for 35 minutes.
Step 3
3. Preheat oven-safe pan on stovetop on med-high heat.
Step 4
4. Rinse and dry salmon well. Score skin. Season with salmon magic.
Step 5
5. Place oil in hot skillet and lay salmon skin side down in pan. Cook 2-3 minutes and place pan in oven to roast.
Step 6
Cook until nice crust forms and salmon feels slightly firm. About 10 minutes.
