Honey and Lime Salmon

A little sweet and citrusy, this salmon is a quick and easy version of those pre-marinated fish bags you can pick up in the supermarket, perfect for a speedy dinner. You can play around with different seasonings too. How about adding a pinch of chilli powder for a bit of a kick?

Instructions

Preheat the oven to 220°C (fan 200°C/gas mark 7).

Rip off two large pieces of foil, about 30 cm (12in) square, big enough for each of the salmon fillets to sit inside. Place a salmon fillet in the middle of a piece of foil. Squeeze over the juice of half a lime (or 1 tbsp), ½ tsp of soy sauce, sprinkle over the garlic granules and drizzle over ½ tsp of honey. You can also season with a little pepper to taste. Scrunch up the foil to seal up the salmon. It will look like a pasty that has been stood up.

Repeat with the second salmon fillet.
Step 4
Place the foil parcels onto a baking tray and into the middle of the hot oven for 15 minutes, until the salmon is cooked and opaque throughout.

Remove from the foil discarding any leftover liquid and serve with an accompaniment of your choice.
