APPLE CRUMB CAKE WITH CRÈME FRAÎCHE GLAZE

Filled with layers of roasted apples and topped off with an Orange-Cinnamon Streusel and tangy glaze, this crumb cake is sweet to the core. We used Honeycrisp apples for their sweet-tart flavor, but if you can't find Honeycrisps, any other bright baking apple, like Granny Smith or Braeburn, will do.

For the cake
3 cupsapples
thinly sliced, Honeycrisp
1 cupgranulated sugar
divided
1 ½ teaspoonsground cinnamon
1 ½ cupsall-purpose flour
1 ½ teaspoonsbaking powder
¼ teaspoonkosher salt
½ cupunsalted butter
melted
2eggs
large, room temperature
¼ cupcrème fraîche
room temperature
1 ½ teaspoonsvanilla extract
½ teaspoonalmond extract

Instructions
For the cake
Step 1
1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper. Spray an 8-inch light-colored springform pan with cooking spray; line bottom and sides of pan with parchment paper.

2. In a large bowl, toss together apples, 2 tablespoons (24 grams) sugar, and cinnamon. Let stand for 20 minutes. Pat apples dry; reserve 23 slices. Cut remaining slices crosswise into ½-inch pieces; spread on prepared baking sheet.

3. Bake apple pieces until tender, 10 to 12 minutes. Let cool on pan for 20 minutes. Reduce oven temperature to 350°F (180°C).

4. In a large bowl, whisk together flour, baking powder, salt, and remaining 1 cup (200 grams) sugar. Make a well in center of flour mixture; add melted butter, eggs, crème fraîche, and extracts, whisking just until combined, stopping to scrape sides of bowl.

5. Spread half of batter in prepared pan. Arrange roasted apple pieces on batter, leaving a¼-inch border. Spread remaining batter on top of apples. Arrange reserved 23 apple slices in fans of 3 or 4 on batter as desired. Top with Orange-Cinnamon Streusel, letting apples peek through.

Bake until golden brown and a wooden pick inserted in center comes out with just. a few moist crumbs, 55 minutes to 1 hour and 5 minutes, covering with foil after 30 minutes of baking to prevent excess browning. Let cool in pan for 5 minutes. Run a knife around edges of cake. Remove from pan, and let cool completely on a wire rack. Drizzle Crème Fraîche Glaze onto cooled cake before serving.

Make the streusel. In a medium bowl, whisk together sugar, orange zest, salt, and cinnamon. Stir in melted butter, and fold in flour just unt combined. Use immediately, or refriger
