3golden potatoes
sliced peeled washed
4eggs
1red onion

1green bell pepper

1carrot

Method
French Fries
Step 2
Peel and slice potatoes into french fry size. Wash potatoes in cold water to remove starch, drain, and pat dry with paper towel
Step 3
In deep pot, preheat frying oil to 350F. Carefully add potatoes into pot (fry in batches to not crowd pot). Cook until golden brown. Remove from oil onto paper towels or wire rack and immediately season with salt
Omelette
Step 4
In separate bowl scramble eggs with red onion, bell peppers, and carrots

In nonstick pan, on medium heat, add tsp of oil and bring to temperature. Lay handful of french fries to cover majority the bottom of pan. Pour egg mixture into pan to full coat bottom of pan. Cover with lid for 3-5 minutes until eggs are cooked (be careful of heat not to burn bottom of eggs)
Step 6
Remove lid and place plate on top of pan. Carefully flip pan upside down to transfer omelette onto plate.
Step 7
Lightly coat pan with oil and slide the omelette back on plate (cooked side facing up). Cook other side for 2-3 minutes, remove, and serve with kachumbari
